Black Bean and Avocado Burrito Bowls

Ingredients:

-1 can of black beans (15 oz)

-Large handful of chopped cilantro

-1 lime, juiced

-2 avocados, chopped

-Sea salt, to taste

-Cayenne pepper, to taste

-1 head of lettuce for bowls

-1 medium onion, chopped

-Olive oil for frying

-Corn tortillas or rice wraps

Directions:

In a large skillet on medium heat add a large spoonful of olive oil and your onions. Add your cilantro and let it cook for about 5 minutes. Add the beans and salsa and sauté until it's warm. Add a few pinches of salt and pepper. In each bowl add half of the avocado, then top with beans. Layer the bowls with the lettuce leaves that have been washed then wrap up by topping with cheese, sour cream, guacamole, salsa or any other toppings you'd like!


Vegetarian Curry Roasted Cauliflower and Potatoes

Roasting these veggies makes them extra crispy and caramelizes the natural sugars in the potatoes. This is a great dish for outdoor entertaining because you can roast up all of these ingredients beforehand and then just assemble when your guests arrive.

The best thing about this recipe is that it's so versatile. You can add different spices or even substitute any of the vegetables for your favorite: cauliflower, broccoli, squash, sweet potato, etc. It's a delicious and healthy dish that can be made to suit anyone's taste buds!


One Pan Garlic Herb Salmon

This dish is an easy and flavorful way to cook salmon. It's also a great recipe for when you're in a time crunch.

What You'll Need:

-1 tablespoon of olive oil

-2 cloves of garlic, minced

-1 sprig of fresh thyme, leaves only

-Zest and juice of one lemon

-Sea salt and ground pepper to taste

-4 pieces of salmon (approximately 1 pound)

What You'll Do:  In a small bowl, mix together the olive oil, garlic, thyme leaves, lemon zest, and juice. Season with salt and pepper. Rub mixture on both sides of the fish. Heat pan over medium high heat with 1 tablespoon olive oil until hot but not smoking; add fish skin side down and saute for 3 minutes or until browned on the bottom. Flip the fish over and continue cooking for 3 minutes or until it is cooked through. Remove from pan and transfer to a plate covered with foil to rest for 5 minutes before serving with roasted vegetables (see number 4).


One-Pan Mexican Quinoa

Thai Ground Turkey Lettuce Wraps

2 tbsp water
